Are you having fun with the Council of Thieves stuff? My group just started it and are having a blast. Why not just keep busting through those?

Yeah, I would have to ask why leave the current AP? That might help answer what the group is looking for.

I'd stick with Council of THieves if for the only reason your characters are going to be of the about right level. The other two are going to be for first level characters and that will be way too easy for 7th level ones.

I would say talk to your players. If you suddenly switched out of the AP they might get upset with you. It really depends how invested they are into finishing things. So honestly just talk to them and see. If they want to finish you have your answer, if they are not a fan of it. Then i would come back and ask for advice and leave that option off.
