How Visible To players Should The Rules Be?

The things that occupy one's mind include the state of the road surface; the location of stationary cars, the distance from their driver-side doors, whether there are drivers in them, whether they have lights on, and other features of them that correlate to risk; the position of cars moving next to, in front of or behind one; etc.
Are you doing all of this consciously or subconsciously? I think your subconscious mind would be doing all of this assessing for you so as not require you to consciously think about certain things all of the time. It's how you can walk and chew bubblegum at the same time.

Excellent! The only problem is that Strawmen are made of straw. I didn't say that you couldn't tap the screen. You surely tapped it, but harder than you would have if your eyes were open. Or else you moved slower than if your eyes were open and tapped it just as softly.
Mine is a touchscreen, so I'll not do this experiment lest I wind up tapping things I really don't want to tap... :)

You introduced this whole screen touching angle. Accusing others of strawmaning when you introduced the topic seems… I don’t know… both misplaced and audacious come to mind.

Similarly, telling someone else you know what they experienced better than they. Definitely both in that case.

Did 5e do away with "Legend Lore" as a Bardic ability?

Failing that, knowledge checks to recall lore?
You can cast the Legend Lore spell, but that's a 5th level slot, so only good for major encounters.

And yes, I could probably hammer out some house rules but the DC's for the knowledge checks are going to end up fairly arbitrary I think. The old "DC x + CR" runs into some issues where some powerful monsters should, by rights, be more famous than others, and you can have a fairly weak monster be somewhat obscure. I could use advantage/disadvantage, but given how easy the game makes it for players to get advantage on checks, I don't think that would have much impact.

For me, it's easier to give them basic info and maybe a pro tip ("Don't use fire on red dragons, kids!") than try to figure out how much info a die roll should grant. Ideally, I'd want something like how late 3.5 handled monster lore, but doing that for each foe is where I see issues.

They would still have their share of misses, hits and 'defender defends' moments. They would also still be subjected to their opponent's attacks as the latter laughed off the party's attempts to defeat them.

Despite claims that people will be able to tell the difference between 393(105mph fastball) milliseconds and 400(100 mph fastball) milliseconds, PCs just aren't going to know the armor classes and hit points of the things they face just by looking or spending a few seconds in combat.

So do you stop the players from knowing the stats of their PCs?

No. I could, but I have enough to track on my side of the screen already. Tracking their stuff is too much. I tried this during 1e or 2e and gave it up very quickly. NPC AC and hit points, though, are already tracked by me. It's no extra work for me to continue tracking it and they simply don't need to know any more than "It's hard to hit it" or "It's very quick" or... in order to make an informed decision about what their PC wants to do.
